So I have this kimchi pancake recipe and everytime I make it it turns out a little soggy and gross. Anyone know what the problem could be?

Using too much liquid, perhaps? I've found that recipes often use too much liquid. Also, your pan may not be hot enough.

I haven't made kimchi pancakes, but the recipes I've seen say to drain the kimchi well before cutting it up mixing it with other ingredients. You could also try gently stir frying the kimchi (without oil) after you cut it up and drain it. This might cook off some of the excess liquid from the kimchi, before you add it to the pancake batter.
